Terroir is the complete natural environment in which our Athenolia olives grow. It encompasses the soil, topography, and climate of our groves in the mountains of Laconia, Greece. Every bottle of Vordonia captures the unique character of this extraordinary land — a taste that cannot be replicated anywhere else on earth.

Our Land, Our Legacy

Our olive groves sit at the foothills of Mount Parnon in the village of Vordonia, Laconia. The rocky limestone soil, the cool mountain breezes, the generous Mediterranean sun, and the morning mist rising from the valley below combine to create an environment unlike any other. The Athenolia olive variety — named after the Goddess Athena — has thrived in this terroir for centuries. My father taught me that the land does not lie. When you taste our oil, you taste centuries of sun-baked stone, wild herbs, and ancient tradition. We maintain 210 Athenolia olive trees across 19 small groves, some just a few hundred yards apart, yet each producing oil with its own distinct character.

Why Every Grove is Different

Each of our 19 groves produces olive oil with subtle differences in aroma, flavor, and color — all from the same Athenolia cultivar. This is the magic of terroir. A grove facing south receives more direct sunlight, resulting in oil with deeper golden color and a buttery finish. A grove tucked into the mountain shadow develops oil that is greener, more herbaceous, with notes of fresh-cut grass and artichoke. The soil composition — rich in limestone, iron, and ancient marine deposits — feeds the roots with minerals that become flavor. The altitude, between 300 and 600 meters, ensures cool nights that slow the ripening process, concentrating the polyphenols and antioxidants that give our oil its extraordinary shelf life and health benefits. We never blend. Each pressing is a single-grove, single-cultivar expression of terroir at its purest.

Simple dishes that let the oil speak for itself

Horta Vrasta (Boiled Wild Greens)

Horta Vrasta (Boiled Wild Greens)

A staple of the Greek table, this simple dish lets the quality of the olive oil shine through. My mother prepared this every week with greens foraged from the hillsides around Vordonia.

Ingredients

  • Wild greens (dandelion, chicory, or amaranth)
  • Sea salt
  • Fresh lemon juice
  • Vordonia Athenolia Extra Virgin Olive Oil

Preparation

Wash the greens thoroughly. Boil in salted water until tender, about 8-10 minutes. Drain well and arrange on a plate. Drizzle generously with Vordonia EVOO and fresh lemon juice. Serve warm or at room temperature.

Serving

Serve alongside crusty bread and feta cheese for a complete traditional meal.

Fasolada (Traditional Bean Soup)

Fasolada (Traditional Bean Soup)

Known as the national dish of Greece, fasolada is a humble bean soup elevated to perfection when finished with a generous pour of exceptional olive oil.

Ingredients

  • White beans (soaked overnight)
  • Onion, carrot, celery
  • Crushed tomatoes
  • Sea salt, bay leaf
  • Vordonia Athenolia Extra Virgin Olive Oil

Preparation

Sauté diced onion, carrot, and celery in olive oil until soft. Add drained beans, tomatoes, bay leaf, and water to cover. Simmer for 1-2 hours until beans are creamy. Season with salt. Finish each bowl with a generous drizzle of Vordonia EVOO.

Serving

Serve hot with olives, raw onion, and warm bread. The fresh oil stirred in at the table transforms the dish.

A rustic Mediterranean salad where dried barley rusks are softened with ripe tomato and baptized in premium olive oil.

Ingredients

  • Barley rusks (paximadia)
  • Ripe tomatoes, grated
  • Cretan mizithra or feta cheese
  • Dried oregano, sea salt
  • Capers (optional)
  • Vordonia Athenolia Extra Virgin Olive Oil

Preparation

Briefly moisten the rusks with water. Top with grated fresh tomato, crumbled cheese, oregano, and capers. Drizzle abundantly with Vordonia EVOO. Let sit for five minutes before serving.

Ladi Lemono (Oil & Lemon Dressing)

Ladi Lemono (Oil & Lemon Dressing)

The simplest and most iconic Greek dressing. When made with truly exceptional olive oil, it needs nothing else.

Ingredients

  • Vordonia Athenolia Extra Virgin Olive Oil
  • Fresh lemon juice
  • Dried oregano
  • Sea salt
  • Fresh cracked pepper

Preparation

Whisk three parts Vordonia EVOO with one part fresh lemon juice. Add a pinch of dried oregano, salt, and pepper. Whisk vigorously until emulsified.

Serving

Use on grilled fish, roasted vegetables, or any salad. This dressing showcases the terroir character of the oil beautifully.

Our Philosophy

We believe that the finest olive oil is not made — it is revealed. Our role is simply to honor what nature provides. We wait for the olives to ripen fully on the tree. We harvest by hand, one branch at a time. We press slowly, using cold water and an old-fashioned pressure press, never rushing, never heating, never forcing. Each pressing can take up to seven hours. The result is oil that carries the full expression of its terroir — the warmth of the Laconian sun, the minerals of the mountain soil, the freshness of the Mediterranean breeze. This is not just olive oil. This is a living connection to the land, to our ancestors, and to a tradition that stretches back thousands of years.
